Truffles

Truffles are a fungus Tuberaceae family. Are irregularly shaped, more or less rounded, like a potato, rough surface and dark color. The interior features a full appearance of veins. They range from the size of a walnut to that of a potato. It cangemerar herbicidal substances.Their main use is cooking, due to its aroma and unique taste, popular in European cuisine, particularly in Spain, France and Italy.
The use of truffles in the kitchen dates to the Egyptians, and throughout history have been attributed aphrodisiac properties. In the Middle Ages were seen as a manifestation of the devil, by its blackish color and formlessness.

There are about 30 species of truffles in Europe but only a few are comestiblemente appreciated.
